Northeastern Chinese Cuisine The Northeastern Chinese Cuisine relies on the idea of preserved food and hearty fare. A very common form of preserving food is by Pickling which is traditionally done in most households in giant clay pickling vats. Unlike in the South of China, noodles are the most common form of starch rather than rice. Popular dishes include pork and chive dumplings, cumin & caraway lamb, congee, tealeaf stewed hardboiled eggs, congee with several types of pickles (mustard root is very popular), and cornmeal congee.
Hunan Cuisine This cuisine which is sometimes called Xiang Cuisine contains a few other ingredients. Hunan Cuisine is usually spicier and contains a larger variety of ingredients. This cuisine is known for its liberal use of chilli peppers and garlic. Some of this Cuisine relies on sweetness from ingredients such as honey. Some representative dishes from the Hunan Cuisine include : Sweet and Sour Chicken, Orange Beef, Crispy Duck, Dongan Chicken, Peppery and Lotus Seeds in Sugar Candy.

Fujian Cuisine This cuisine is derived from the native cooking style of the province Fujian. One of the most popular dishes called "Buddha jumps over the wall", this is a complex dish making use of many ingredients, including shark fin, sea cucumber, abalone, and Shaoxing wine. Some representative dishes from the Fujian Cuisine include : Oyster Omelette, Popiah, Fujian fish balls and noodles with dumplings.
